Then heat oil in a wok, using a 1:2 ratio of peanut oil to sesame oil. Once hot, add Sichuan peppercorns and simmer until fragrant. When the peppercorns turn black, turn off the heat, remove the peppercorns, and pour the oil evenly over the dish.
Marinate at room temperature for three hours, or in winter for six hours, then plate and serve.
If pickled in winter, it can be kept for three days; if pickled in summer, it is best to eat it on the same day.
