Of course, there is another explanation: Guo Moruo mentioned in his writings that he ate white-cut chicken in Sichuan during his childhood, and his description of it was so delicious that it made his mouth water, hence the name.

First, put the chicken in cold water, add scallions, ginger slices, Sichuan peppercorns and Shaoxing wine. Bring it to a boil over high heat, then simmer over low heat for about 15 minutes. After turning off the heat, let it sit for a while longer.

After cooking, take the chicken out and soak it in cold water for 15 minutes. This will make the chicken skin crisper.

Next, it's time to make the sauce. Gu Yunyi can eat spicy food, but the two little ones can't, so I made two kinds. Mix minced garlic, minced ginger, soy sauce, sesame oil, vinegar, sugar, salt, and other seasonings together, and the sauce is ready.
