Chapter 13 Mung Bean Cake

Half an hour later, the aroma of stewed meat wafted out, enticing the two little ones to come and smell it.

Seeing their greedy expressions, Xu Qingmeng smiled and said, "You can't eat it yet." As she spoke, she didn't stop what she was doing, casually tossing a few boiled eggs into the stew pot. The aroma became even stronger the moment the lid was lifted.

Xu Qing dreamed that the two little ones might not have eaten enough, so she went to check on the mung beans. She gently squeezed the soaked mung beans and found that the beans had softened and the skins could be easily rubbed off.

So she decided to start by making mung bean cakes. She rubbed off the skin of each mung bean to expose the kernel inside, and then put the peeled mung beans into a pot with water and boiled them over high heat.

After boiling over a large fire, Xu Qingmeng asked He Shi to remove some of the wood and simmer over a low fire until the mung beans were fully cooked and very soft.

Next, she used a cloth to mash the cooked mung beans into a smooth mung bean paste.

Pour some oil into the pot, then add the mung bean paste and stir-fry over low heat. During this process, she adds sugar several times to allow the sweetness to permeate every part of the mung bean paste.

After stir-frying the mung bean paste until it becomes thick and most of the moisture has evaporated, Xu Qingmeng scoops out the mung bean paste and sets it aside to cool naturally.

Although the mung bean cake was not fully formed at this time, it already emitted a faint sweet fragrance, making people want to take a bite.

Since there were no molds, Xu Qingmeng used her hands to shape the mung bean paste into roughly the same size squares. She made about fifty of them and couldn't resist eating one herself.

Yun Sheng happened to walk in and saw Xu Qingmeng eating half a piece of mung bean cake. She ran over, hugged Xu Qingmeng's leg, and looked at her expectantly.
"Sister-in-law, I want to eat too," I said, unconsciously touching my stomach. I hadn't eaten enough at noon.

"Let go first," Xu Qingmeng said, swallowing the mung bean cake in her mouth.

She took two plates, filled them with two portions, one larger and one smaller, and said...

"Take this to your older brother, and you, Yunmo, and Mother can share this one."

"Hmm."

As Yun Sheng spoke, she didn't forget to take a piece and put it in her mouth. One bite, and it was sweet and fragrant.

"Sister-in-law, this is so delicious! It's even better than the pastries sold on the street."

Looking at the satisfied look on the little face, Xu Qingmeng urged, "Don't just eat it by yourself, take it out and eat it with everyone."

Meanwhile, the aroma of the braised food grew stronger and stronger. An hour later, the entire courtyard was filled with this mouthwatering smell.

Even the neighboring shops are filled with this lingering smell.

She didn't stop there; she turned around and got the soaked soybeans. Since it was her first time trying to make tofu pudding, she only soaked one pound of soybeans.
If successful, this pound of soybeans can yield about four pounds of tofu pudding.

The original owner of this body was strong, so she didn't need any help. She simply put the soaked soybeans and water into the stone mill and ground them into soybean milk.
The stone mill made a dull sound as it turned, and the soybeans and water gradually turned into soy milk under the grinding of the millstone. However, the soy milk was too thick at first, so Xu Qingmeng added more water to grind it.

A thick layer of foam floated on top of the freshly ground soybean milk. Xu Qingmeng skimmed off the foam, then took out a bucket, lined it with a fine cotton cloth that He had washed, and filtered out the soybean pulp.
Xu Qingmeng asked He Shi to boil a pot of water, then poured the filtered soy milk into the boiling water and continued to cook it.

While boiling the soy milk, there was still foam on top. Xu Qingmeng asked He Shi to help skim off the foam, while she took out the gypsum that had been heated in the stove, ground it into powder, and then added an appropriate amount of water and stirred. After the soy milk in the pot boiled, Xu Qingmeng first took five small bowls, added a little sugar to each, and then ladled out some soy milk to drink after it cooled down.

After Xu Qingmeng turned off the stove, she saw a thin skin form on the surface of the soy milk in the pot. She then poured in the gypsum water and stirred it quickly.

Once the soy milk had thickened and coated with a paste, Xu Qingmeng stopped stirring and then covered the pot to let the soy milk sit for a while.

The soy milk on the stove had cooled down a bit, so she called He Shi, Yun Sheng, and Yun Mo over to try it together, and then brought a bowl over to Gu Yunyi.

"Good!" Gu Yunyi gave a brief evaluation after finishing his drink.

Xu Qingmeng couldn't help but give the big shot a thumbs up in her heart. He was indeed a big shot, as always, sparing with his words.

"Sister-in-law, this is so delicious!" Yun Sheng was a little foodie and finished it quickly.

Xu Qingmeng smiled and patted Yun Sheng's head, then looked at Yun Mo and said,
"Does Yunmo think it tastes good?"

Yunmo nodded emphatically, her little face full of seriousness. "Sister-in-law, it's delicious. It's sweet and white, and it looks very pretty."

"I like it. My sister-in-law will cook it for you again tomorrow."

Xu Qingmeng also loved drinking it, and she felt that the soy milk made from it had a richer and more intense flavor than modern soy milk.

Mrs. He took a sip and liked it very much. "Xiao Meng, this is really delicious. It's sweet but not cloying, and the texture is delicate. It's like eating a cloud."

"Since Mother likes it too, let's cook a lot more tomorrow morning."

After finishing her soy milk, Xu Qingmeng lifted the lid of the pot and looked at the tofu pudding inside. It had already solidified, but she decided to let it sit for another 15 minutes to allow some water to seep out.

Since there was no dried radish at home, Xu Qingmeng could only chop some scallions and cilantro, add some soy sauce, and stir it a few times. She planned to try both sweet and savory versions later, so they could taste which one was better.

However, Xu Qingmeng herself preferred it saltier. When she felt the time was almost up, she scooped the tofu pudding out of the pot. It wasn't as tender as she had imagined, but it was still a success. She planned to try adding less gypsum water next time.

Xu Qingmeng scooped out two large bowls of sauce. She added soy sauce to one bowl and sugar to the other. The savory version was just missing some dried radish.
Xu Qingmeng and Gu Yunyi both prefer savory flavors, while the two children and Madam He prefer sweet ones. Since there are people who like both sweet and savory flavors, she thinks that both flavors can be sold tomorrow morning. In addition, she will not make rice porridge tomorrow morning, since it is free. Who would want to pay for this?

After finishing these tasks, Xu Qingmeng started preparing the filling for tomorrow morning. She planned to make a mushroom and meat sauce.

She took out a piece of meat with alternating layers of fat and lean meat, minced half of it, and diced the other half. Then she added chopped soaked shiitake mushrooms, some soy sauce, and stir-fried them together. The shiitake mushroom and meat filling was ready.

Xu Qingmeng started preparing other fillings for tomorrow morning. Just by glancing up, she could see three of them. Two pairs of bright eyes were staring at the pot on the stove, while the other pair was glancing at her intentionally or unintentionally. She instantly knew what they were up to.

Xu Qingmeng pretended not to see the three people in front of her. The main one was Gu Yunyi, who couldn't eat anymore. He had just recovered and had already eaten quite a lot. Although the two children hadn't eaten enough at noon, they had also eaten quite a bit. If they ate any more, she was afraid they would overeat.
