Bring to a boil over high heat, then reduce to a simmer and cook for a short while. Add the soaked mushrooms and simmer for a few more minutes. In a small pot, stir-fry some other vegetables. Cut the beef into strips, add an egg white and some light soy sauce, mix well by hand, and set aside to marinate for a while.
Heat oil in a wok, add the marinated beef, and quickly stir with chopsticks to separate the beef. Stir-fry until the beef changes color slightly, then remove from the wok.

Heat the wok again, add scallions, ginger, and garlic, along with some dried chili peppers. Stir-fry until fragrant, then add chili pepper pieces and cilantro roots. Pour in the stir-fried beef, stir-fry over high heat, and add chopped cilantro before serving.

Wash the pork belly and slice it thinly. Slice the green bell pepper, scallions, ginger, and garlic. Wash and dry the wok, add some oil, then add the pork belly and Shaoxing wine. Stir-fry over high heat.
Stir-fry the pork belly until slightly browned, then add ginger, scallions, garlic, Sichuan peppercorns, and soy sauce. Stir-fry quickly until the pork belly is evenly browned. Add green chilies and a suitable amount of salt, and continue to stir-fry over high heat until the green and red peppers are about 80% cooked. Add a little more soy sauce, thicken with cornstarch slurry, and then remove from heat and plate.

Remove the root of the cabbage, cut it into thin strips, salt it to draw out the moisture, rinse off the excess salt, add dried chili peppers, minced garlic, Sichuan peppercorns, soy sauce, salt, sugar, and aged vinegar. Finally, pour hot oil over it, mix well, and the cold cabbage salad is ready.
I bought some fresh spinach this morning. I'm tired of eating stir-fried eggs with chives every day, so I substituted spinach for chives. Spinach and eggs stir-fry.

Place the ingredients in a pot of cold water, add Shaoxing wine and scallion segments, bring to a boil, skim off any foam, and remove.

Without adding oil, fry the pork belly in a pan over low heat until golden brown on both sides. Remove the pork belly and drain off any excess oil. Add rock sugar and stir-fry until caramelized. Return the pork belly to the pan and stir-fry until coated with the caramelized sugar. Add an appropriate amount of boiling water.
Finally, add Shaoxing wine, soy sauce, star anise, cinnamon, bay leaves, scallions, ginger, and garlic. Simmer for 15 minutes. Xu Qingmeng opened the lid, added the peeled eggs again, and continued to simmer for another 15 minutes.
