"Okay, then pick only the tenderest shoots." Chen's mother said, her hands moving non-stop. She pointed to several clumps of tender shepherd's purse, dandelion, and lamb's quarters on the ground. "These wild vegetables are at their tenderest now, and they're not bitter. Let's pick more, blanch them when we get back, dry them in the sun, and soak them in hot water in the winter.
